This delicious Zucchini Sandwich is a perfect summer recipe, packed with fresh flavors and healthy ingredients.

Ingredients

  • 2 medium zucchinis, sliced
  • 4 slices of whole grain bread
  • 1/4 cup hummus
  • 1/2 cup feta cheese, crumbled
  • 1 tomato, sliced
  • 1/4 cup fresh basil leaves
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Brush the zucchini slices with olive oil and sprinkle with salt and pepper.
  3. Place zucchini on a baking sheet and roast for about 20 minutes, until tender.
  4. Spread hummus on each slice of bread.
  5. Layer roasted zucchini, feta cheese, tomato slices, and basil leaves on two slices of bread.
  6. Top with the remaining slices of bread.
  7. Cut the sandwich in half and serve immediately.
