Delicious zucchini fritters, perfect as a snack or side dish.

- 2 medium zucchinis
- 1 teaspoon salt
- 1 cup breadcrumbs
- 2 large eggs
- 1 teaspoon pepper
- 1 tablespoon chopped parsley
- 1 tablespoon chopped green onions
- 2 tablespoons olive oil
- Grate the zucchinis and sprinkle with salt. Let sit for 10 minutes.
- Press out excess moisture from the zucchinis.
- In a bowl, combine the grated zucchini, breadcrumbs, eggs, pepper, parsley, and green onions.
- Mix well to combine all ingredients.
- Heat olive oil in a skillet over medium heat.
- Scoop out portions of the mixture and form into patties.
- Fry the patties in the skillet for about 3-4 minutes on each side, until golden brown.
- Remove from skillet and drain on paper towels.
- Serve warm.
Notes
- These can be served with sour cream or yogurt.
- Add shredded cheese for extra flavor.
