Zaalouk is a traditional Moroccan dish made from cooked eggplants and tomatoes, seasoned with spices and olive oil.

- 2 medium eggplants
- 4 ripe tomatoes
- 4 cloves garlic
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
- Preheat the oven to 400°F (200°C).
- Cut the eggplants in half and score the flesh with a knife. Brush with olive oil and bake for 30 minutes until soft.
- In a skillet, heat the remaining olive oil and sauté the minced garlic until fragrant.
- Add diced tomatoes, cumin, paprika, cayenne, salt, and pepper. Cook until tomatoes are soft.
- Once eggplants are done, scoop out the flesh and add it to the skillet. Mix well to combine.
- Cook for another 10-15 minutes, stirring occasionally. Adjust the seasoning if needed.
- Stir in chopped parsley before serving.

- Serve warm or at room temperature as a dip or side dish.
- Pair with Moroccan bread or pita.
