Zaalouk is a traditional Moroccan dish made from cooked eggplants and tomatoes, seasoned with spices and olive oil.

Ingredients

  • 2 medium eggplants
  • 4 ripe tomatoes
  • 4 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the eggplants in half and score the flesh with a knife. Brush with olive oil and bake for 30 minutes until soft.
  3. In a skillet, heat the remaining olive oil and sauté the minced garlic until fragrant.
  4. Add diced tomatoes, cumin, paprika, cayenne, salt, and pepper. Cook until tomatoes are soft.
  5. Once eggplants are done, scoop out the flesh and add it to the skillet. Mix well to combine.
  6. Cook for another 10-15 minutes, stirring occasionally. Adjust the seasoning if needed.
  7. Stir in chopped parsley before serving.

Notes

  • Serve warm or at room temperature as a dip or side dish.
  • Pair with Moroccan bread or pita.
