- 2 cups all-purpose flour
- 1/2 cup vegetable oil
- 1/2 cup water
- 1 teaspoon salt
- 1 cup cooked lentils
- 1/2 cup sautéed onions
- 1/2 cup diced bell peppers
- 1 tablespoon cumin
- In a bowl, mix the flour and salt.
- Add oil and water to form a dough.
- Knead until smooth and let rest for 30 minutes.
- In another bowl, combine lentils, onions, bell peppers, and cumin.
- Roll out the dough and cut into circles.
- Fill each circle with the lentil mixture and fold over, sealing the edges.
- Bake at 375°F for 25-30 minutes until golden brown.
Notes
- Make sure to seal the empanadas well to prevent filling from leaking.
- These can be frozen before baking for later use.
