Tiropitakia Kourou are delicious Greek cheese pastries made with flaky phyllo dough and stuffed with creamy cheese filling.

Ingredients

  • 1 package phyllo dough
  • 1 cup feta cheese, crumbled
  • 1 cup ricotta cheese
  • 1 egg
  • 1/4 cup olive oil
  • 1/2 cup fresh herbs (parsley, dill)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine feta, ricotta, egg, olive oil, and herbs. Season with salt and pepper.
  3. Lay out phyllo dough and brush with olive oil.
  4. Cut dough into squares or rectangles, spoon filling onto one side, and fold over to create triangles.
  5. Place on a baking sheet and brush tops with olive oil.
  6. Bake for 25-30 minutes or until golden brown.
  7. Allow to cool slightly before serving.

Notes

  • Best served warm.
  • You can freeze them before baking for later use.
  • Experiment with different cheeses for variety.
