Shakshuka is a flavorful dish consisting of poached eggs in a spicy tomato sauce, popular in Middle Eastern and North African cuisine.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 can (400g) diced tomatoes
  • 4 eggs
  • salt to taste
  • pepper to taste
  • fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper, cooking until soft.
  3. Stir in garlic, cumin, and paprika, cooking for another minute.
  4. Add diced tomatoes, bring to a simmer, and season with salt and pepper.
  5. Make wells in the sauce and crack the eggs into the wells.
  6. Cover and cook until eggs are done to your liking.
  7. Garnish with fresh parsley and serve warm.

Notes

  • Serve with crusty bread for dipping.
  • Add feta cheese for extra flavor.
  • Adjust spices to taste for heat preference.
