Delicious cream and cheese gratin made from black salsify.

- 1 kg schwarzwurzel (black salsify)
- 500 ml cream
- 200 g grated cheese
- 2 eggs
- 1 onion
- 2 tablespoons butter
- Salt and pepper to taste
- Peel the schwarzwurzel and cut them into pieces.
- Boil the pieces in salted water for about 10 minutes.
- Drain and set aside.
- In a pan, sauté the chopped onion in butter until translucent.
- In a bowl, mix the cream, eggs, salt, and pepper.
- Layer the schwarzwurzel in a baking dish and pour the cream mixture over it.
- Top with grated cheese.
- Bake in a preheated oven at 180°C (350°F) for about 30-40 minutes until golden brown.
Notes
- For added flavor, consider adding nutmeg.
- You can substitute cheese with any preferred type.
