Crispy and delicious Parmesan Zucchini Pommes, a healthier alternative to traditional fries.

Ingredients

  • 2 large zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the zucchinis into fries.
  3. In a bowl, mix the breadcrumbs, Parmesan, garlic powder, onion powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini fry into the egg, then coat in the breadcrumb mixture.
  6. Place the coated fries on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes until golden brown.
