A delicious twist on traditional lasagna with a Mexican flair, featuring layers of tortillas, cheese, and enchilada sauce.

Ingredients

  • 8 tortillas
  • 2 cups shredded cheese
  • 1 pound ground beef
  • 1 can enchilada sauce
  • 1 cup black beans
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef with onion, bell pepper, garlic, cumin, and chili powder until browned.
  3. Stir in black beans and half of the enchilada sauce.
  4. In a baking dish, layer tortillas, meat mixture, and cheese. Repeat layers and finish with cheese on top.
  5. Pour the remaining enchilada sauce over the top.
  6. Bake in the preheated oven for 30-35 minutes until cheese is bubbly.
  7. Let cool for a few minutes before serving.

Notes

  • Can be made vegetarian by omitting the beef and adding more beans.
  • Serve with sour cream and avocado on the side.
  • Store leftovers in the refrigerator for up to 3 days.
