A delicious low-carb twist on the traditional Filipino ube cheesecakes, using almond flour and ube for a rich flavor.

Ingredients

  • 2 cups almond flour
  • 1/2 cup erythritol
  • 1/2 cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • 1 cup ube puree
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix almond flour and erythritol.
  3. Add melted butter and mix until crumbly.
  4. Press the mixture into the bottom of a springform pan.
  5. In another bowl, beat cream cheese until smooth.
  6. Add ube puree, eggs, vanilla, and salt; mix until combined.
  7. Pour filling over the crust in the springform pan.
  8. Bake for 45-50 minutes or until the center is set.
  9. Let cool before refrigerating for at least 2 hours before serving.

Notes

  • Best served chilled for a firmer texture.
  • Ube can be adjusted according to taste.
  • Store leftovers in the refrigerator for up to 5 days.
