- 250 g honey
- 250 g brown sugar
- 2 eggs
- 500 g flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- 1 tsp ground cloves
- 1 tsp ground nutmeg
- 1 tsp allspice
- 100 g chopped nuts
- 200 g vanilla liqueur
- 150 g heavy cream
- 200 g sugar (for caramel)
- 50 ml water (for caramel)
- 1/2 tsp sea salt (for caramel)
- In a pot, heat honey and brown sugar until dissolved. Let cool.
- Beat eggs in a bowl, then mix in the cooled honey mixture.
- Sift together flour, baking powder, and spices, then slowly blend into the wet ingredients.
- Fold in chopped nuts.
- Chill the dough for several hours or overnight.
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Shape the dough into small balls and place them on the sheet.
- Bake for 10-15 minutes or until golden brown.
- For the cream, combine vanilla liqueur and heavy cream, beating until thick.
- Make the caramel by heating sugar and water until a golden color is achieved, then remove from heat and stir in sea salt.
- Once cookies are cool, fill them with the cream and drizzle with caramel.
Notes
- Cookies can be stored in an airtight container for up to a week.
- For a spicier cookie, increase the amount of ground spices.
- Ensure caramel is not too hot when drizzling over filled cookies.
