- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1 cup coconut milk
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- Preheat your oven to 400°F (200°C).
- In a saucepan, combine water and butter and bring to a boil.
- Add flour and salt, stirring until the mixture forms a ball.
- Remove from heat and let it cool slightly.
- Add eggs one at a time, mixing well after each addition.
- Drop by tablespoon onto a baking sheet.
- Bake for 20-25 minutes until golden brown.
- Prepare filling by cooking coconut milk and sugar until thickened.
- Mix in vanilla extract and shredded coconut.
- Cool and fill the baked puffs with the coconut caramel cream.
Notes
- Garnish with extra shredded coconut for added flavor.
- Store in the refrigerator for up to 2 days.
