- 2 cups grated carrots
- 1 cup sugar
- 1 cup vegetable oil
- 4 eggs
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine grated carrots, sugar, and oil.
- Add eggs, one at a time, mixing well after each addition.
- In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the carrot mixture and mix until just combined.
- Fold in walnuts.
- Pour the batter into a greased cake pan.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Let it cool before serving.
Notes
- For extra moisture, you can add a small amount of crushed pineapple to the batter.
- Serve with cream cheese frosting for added flavor.
