- 2 cups potatoes, thinly sliced
- 1 cup zucchini, thinly sliced
- 1 cup bell peppers, chopped
- 1 cup onions, chopped
- 1 cup grated cheese (e.g., Gruyere)
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons fresh thyme, chopped
- 2 teaspoons fresh rosemary, chopped
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix together the potatoes, zucchini, bell peppers, and onions.
- Grease a baking dish with olive oil and layer half of the vegetable mixture in the dish.
- Sprinkle half of the cheese over the layered vegetables.
- Add the remaining vegetables and top with the rest of the cheese.
- In a separate bowl, mix the vegetable broth with salt, pepper, thyme, and rosemary.
- Pour the broth mixture over the layered vegetables.
- Bake in the preheated oven for 45-50 minutes until the top is golden brown and the vegetables are tender.
- Let cool for a few minutes before serving.

- This dish can be adapted with different vegetables based on what is in season.
- Serve with a side salad for a complete meal.
