A delicious and hearty gratin featuring seasonal herbs and vegetables.

Ingredients

  • 2 cups potatoes, thinly sliced
  • 1 cup zucchini, thinly sliced
  • 1 cup bell peppers, chopped
  • 1 cup onions, chopped
  • 1 cup grated cheese (e.g., Gruyere)
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons fresh thyme, chopped
  • 2 teaspoons fresh rosemary, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix together the potatoes, zucchini, bell peppers, and onions.
  3. Grease a baking dish with olive oil and layer half of the vegetable mixture in the dish.
  4. Sprinkle half of the cheese over the layered vegetables.
  5. Add the remaining vegetables and top with the rest of the cheese.
  6. In a separate bowl, mix the vegetable broth with salt, pepper, thyme, and rosemary.
  7. Pour the broth mixture over the layered vegetables.
  8. Bake in the preheated oven for 45-50 minutes until the top is golden brown and the vegetables are tender.
  9. Let cool for a few minutes before serving.

Notes

  • This dish can be adapted with different vegetables based on what is in season.
  • Serve with a side salad for a complete meal.
