- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp espresso or strong coffee
- 1/4 cup powdered sugar for dusting
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- In a separate bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, vanilla, and espresso to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are lightly browned.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
- Dust with powdered sugar before serving.
