- 2 cups whole wheat flour
- 1 cup unsweetened applesauce
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup honey or maple syrup
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup diced apples
- 1/2 cup chopped nuts (optional)
- Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
- In a mixing bowl, combine whole wheat flour, baking soda, baking powder, cinnamon, and salt.
- In another bowl, whisk together applesauce, honey (or maple syrup), eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the diced apples and nuts if using.
- Spoon the batter into the muffin liners, filling them about 2/3 full.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before transferring to a wire rack.

- Make sure to use ripe apples for the best flavor.
- You can substitute honey with maple syrup for a vegan option.
