Delicious and healthy apple muffins that are perfect for breakfast or a snack.

Ingredients

  • 2 cups whole wheat flour
  • 1 cup unsweetened applesauce
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced apples
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a mixing bowl, combine whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  3. In another bowl, whisk together applesauce, honey (or maple syrup), eggs, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the diced apples and nuts if using.
  6. Spoon the batter into the muffin liners, filling them about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before transferring to a wire rack.

Notes

  • Make sure to use ripe apples for the best flavor.
  • You can substitute honey with maple syrup for a vegan option.
  • Store the muffins in an airtight container for up to 3 days.
