- 4 ripe bananas
- 1/2 cup unsalted butter
- 1 cup brown sugar
- 1/4 cup dark rum
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- Preheat the oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat, then add the brown sugar and stir until dissolved.
- Add sliced bananas, cinnamon, and vanilla extract; cook for 2-3 minutes.
- Remove from heat and carefully stir in dark rum.
- In a separate bowl, mix flour, sugar, baking powder, and salt.
- Slowly add the milk to the dry ingredients and stir until combined.
- Pour the batter into a greased baking dish, then top with the banana mixture.
- Bake for 30-35 minutes or until golden brown.
- Let cool slightly before serving.
