- 2 ripe avocados
- 1 pound shrimp, peeled and deveined
- 1/4 cup red onion, diced
- 1/4 cup cherry tomatoes, diced
- 1/2 cup shredded cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon lime juice
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Preheat the oven to 375°F (190°C).
- In a bowl, combine shrimp, red onion, cherry tomatoes, garlic, olive oil, lime juice, paprika, salt, and pepper.
- Fill each avocado half with the shrimp mixture and top with shredded cheese.
- Place the stuffed avocados on a baking sheet and bake for 15-20 minutes, or until shrimp is cooked through and cheese is bubbly.
