- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cocoa powder
- 1 1/2 cups vegetable oil
- 1 cup buttermilk
- 2 large eggs
- 2 tablespoons red food coloring
- 1 teaspoon vanilla extract
- 1 teaspoon white vinegar
- 8 oz cream cheese (for frosting)
- 4 cups powdered sugar (for frosting)
- 1/2 cup butter, softened (for frosting)
- Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
- In a bowl, mix the flour, sugar, baking soda, salt, and cocoa powder.
- In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar.
- Combine the wet and dry ingredients, mixing until just combined.
- Fill the cupcake liners about 2/3 full and bake for 20-22 minutes.
- Let the cupcakes cool completely before frosting.
- For the frosting, beat together cream cheese, butter, and powdered sugar until smooth.
- Frost the cooled cupcakes and enjoy!
